I wanted to have our traditional favourites but make them more healthy but taste amazing.
I was led to two great websites that helped me do this. The recipes call for vegan ingredients. I didn't use special products, just what I had at home.

dressing (my mom's recipe, no changing that)
cranberries sweetened with honey and agave

Glory Bowl
8 cups brown rice
2 cups raw beets grated
2 cups raw carrots grated
2 cups almonds toasted
2 cups spinach leaves
2 cups tofu, cubed ( I didn't use tofu, I used feta cheese)
Dressing
1/2 cup nutritional yeast flakes
1/3 cup water
1/3cup tamari or soy sauce
1/3 cup apple cider vinegar
2 cloves garlic crushed
1 1/2 cup vegetable oil
2 Tbsp tahini
If you use the tofu yoiu need to sauté it.
Dressing:
Combine nutritional yeast, water, tamari or soy sauce, apple cider vinegar, tahini, and crushed garlic in a blender. Add oil in a steady stream. You will have leftover dressing to use again.
Combine brown rice, vegetables, almonds, and tofu or feta. Add dressing to taste.
Dessert was triffle- nothing healthy about it at all!
